Cranks Recipe Book: The Vegetarian Classics
About this deal
This recipe for Cranks Cheese Scones is a real blast from the past! My mum, whose old Cranks cookbook I now have, used to bake these all the time. We love these very cheesy scones, and I often bake them to accompany soups, stews and casseroles in place of bread. Forgotten the title or the author of a book? Located in Carnaby Street, it was positioned on what was about to become the most happening location in the world, and even became part of the street’s great draw. Office workers, health-food fiends and even the Beatles were customers, serving themselves salad from large wooden bowls. The rustic plates were exactly the kind you’d expect to see in the hands of today’s hot young chefs at the latest new-Nordic-inspired restaurants.I know what it is to lead a busy life and to want great meals without spending too much time in the kitchen.

From buns, I moved on to flans or quiches made with wholemeal flour pastry and I often cooked a version with cheese and leeks at home.
I would certainly recommend that you use really good carrots to get the best taste. Use home grown or locally grown carrots rather than the supermarket offerings, as they are always tastier and may not be any more expensive.

How absolutely delicious do those scones look Karen? Well I’ll tell you, absolutely marvellous. As you know I’m a big fan of Cranks and I’m so sad they closed their last eatery a couple of years or more ago now. But their cookery books remain – hooray. And lovely to bake something your mum made so often too. Today’s recipe is a slightly adapted version of the Cranks cheese roll: I remember both eating these at the restaurant and cooking them from the book, stuffed with cress, which added a welcome, fresh, light-green aspect. It might have been these buns that gave me a taste for the slightly nutty flavour of wholemeal flour. Of all the recipes in the Cranks Recipe Book, I think today’s Cranks Cheese Scones, and the Cheese Baps are the most popular. And not just for home bakers, but they were both extremely popular in all of the Cranks restaurants and shops too.
This is a really simple and low cost meal and yet is so tasty and easy to prepare too! If you like carrots, you will love this recipe!
